Now's the time to plan a Green Dinner for St. Patrick's Day


Each year my friend and big time foodie Carl Mindling, plans a special holiday dinner for St. Patrick's Day. It's his annual green food dinner! It's pretty self explanatory. Everything he serves has to contain the color green.


Last year was the first time I'd attended a green dinner...


All of the appetizers were shades of green... Two kinds of olives, cornichon, edamame, artichoke hearts and hearts of palm.


Green hummus and even the crackers had green herbs and pumpkin seeds.


A mojito with fresh mint.


Our friend Andy came and made green nettle soup...


Green, leafy, veggies...


And asparagus...


Carl made his signature green spinach salad with goat cheese crumbles and caramelized, butter sauteed pears...


Grilled artichokes...


And more green veggies...


Grilled...


Then tossed with fettucini pasta, grated parmesan cheese and fresh herbs and lemon juice.


It was a fantastic meal. Shared with friends I totally understood why Carl hosts this dinner. It was lots of fun and a neat way to recognize the holiday.
